The Yuca Croutons
1 package of Tio Jorge® Yuca Chunks (16 units)
Fry according to cooking instructions; place on paper towels to drain. Place on platter.
The Chorizo con Queso
8 oz. ground pork chorizo
2 c. half and half
1 c. Queso Blanco
1 c. American cheese
1 c. Jalapeño Jack Cheese
Brown chorizo according to package instructions. Add remaining mix ingredients and stir together in pan until cheeses are melted and blended.
For Topping/Garnish
2 T. cooked blacked beans
2 T. large diced avocado
2 T. grilled shucked corn
1 T. sour cream
1 T. pickled Jalapeño peppers
1 T. picked cilantro
To Assemble: Place 1 cup Chorizo con Queso over yuca chunks. Top with black beans, diced avocado, corn, sour cream, Jalapeño peppers and cilantro.
