La cocina intercultural, "la tendencia del año"
Si quieres aprovechar la tendencia que se prevé será la principal de 2024, considera la posibilidad de añadir un plato o dos que encajen en la categoría "intercultural".
El Informe sobre Tendencias en Hostelería para 2024, publicado recientemente por las empresas de marketing y comunicación af&co y Carbonate, incluye la Cocina Intercultural como La Tendencia del Año y explica por qué de esta manera: "La comida americana es un crisol multiétnico y los restaurantes actuales son un reflejo de ello. En lugar de colgarse el sombrero con un trozo de cocina regional, los chefs de 2023 rechazan la rígida idea de autenticidad a cambio de algo que refleje mejor la experiencia contemporánea y diversa de Estados Unidos, ofreciendo nuevas combinaciones y menús que no se pueden etiquetar ni contener fácilmente."
El informe destacaba varios restaurantes que ejemplifican la tendencia con platos que presentan elementos de la cultura culinaria mexicana:
- Little Bull en Durham, Carolina del Norte. Las albóndigas de birria con wontons de chivo estofado, consomé y aderezos tradicionales mexicanos protagonizan el menú.
- Fatima's Grill, con locales en el sur de California y Brooklyn, Nueva York. El menú de comida mediterránea mexicana halal incluye Shawarma Crunch Wraps y salsa picante embotellada "Lebamex".
- Vera Cocina en Washington, DC. Los platos libaneses mexicanos incluyen Tostadas Fattoush y Shakshuka con crema de poblano.
- Good Luck Gato en Oakland, California. Esta "cantina izakaya" ofrece platos como Okonomiyaki Baked Potato con carnitas, salsa tonkatsu, mayonesa Kewpie, cebolletas, nori y copos de bonito.

Una unión con sentido: Dual-Concept une una taquería y un local de postres latinos
Los postres latinos de Frutilandia, como los raspados de hielo raspado con chamoy, llevan 18 años triunfando en la zona de Phoenix. Y los tacos de quesabirria y el ramen de birria de Taqueria Factory han complacido a los amantes de la comida mexicana desde 2022.
Ahora los fans de esos restaurantes pueden saborear ambos en un solo viaje. Se ha abierto una tienda de concepto dual con ambas marcas en el centro comercial outlet Arizona Mills de Tempe, y se están preparando varias más.
La idea de la unión nació hace un año y medio, cuando Gamaliel Garfio y su esposa María, propietarios de ambos conceptos, compraron un antiguo local de Walgreens en Chandler, Arizona. Había espacio de sobra para ambos restaurantes en la tienda, así que instalaron uno de cada, pero no conectados.
"Nos dimos cuenta de que ambos iban muy bien", dice Garfio. "Así que más tarde, cuando dimos con el edificio de Arizona Mills, pensamos que podíamos probar los dos menús en el mismo local. Abrimos el Viernes Negro y a la gente le encanta poder comer tacos increíbles y sus postres en el mismo sitio."
Nacimiento de Frutilandia
Cuando los Garfio se mudaron a la zona de Phoenix desde Los Ángeles hace 18 años, descubrieron que era difícil encontrar postres mexicanos auténticos. Habían disfrutado de fresas con crema, hielo raspado cubierto de fruta y sirope, y otras delicias en innumerables negocios de Los Ángeles.
"Aquí en Arizona no había restaurantes así en aquel momento", dice Garfio, que había regentado una pastelería en Los Ángeles con su mujer. "Así que decidimos montar algo para ofrecer este tipo de postres a la comunidad".
Hoy, Frutilandia tiene 10 locales en la zona de Phoenix. El crecimiento del concepto se ha visto impulsado por las franquicias, que los Garfio empezaron a conceder hace unos cinco años. Los Garfio son propietarios de un local y los otros nueve pertenecen a franquiciados.
"La ventaja de la franquicia es que podemos crecer más rápido porque es otra persona la que invierte en el restaurante, utilizando nuestro logotipo, sistemas, diseños, recetas y asesoramiento", dice Garfio. "Y para el franquiciado, puede haber personas que quieran abrir un restaurante pero no sepan cómo, así que pueden optar por la opción de la franquicia y entrar en algo que ya está establecido".
Los franquiciados pagan a los Garfio un canon del 5% y un 2% en concepto de marketing, en función de las ventas. Compran algunas cosas a la empresa, como los siropes de frutas naturales hechos en casa, los uniformes y los vasos transparentes con el logotipo, y compran el resto a una lista de proveedores preferentes.
Ampliación a los clásicos mexicanos
Hace unos años, los Garfio decidieron ampliar su negocio con un nuevo concepto centrado en los platos tradicionales del menú mexicano. Lanzaron Taqueria Factory en 2022 en Chandler, Arizona. Ocho meses después empezaron a franquiciar, y ahora hay tres locales franquiciados y dos más en preparación.
"Estamos en un mercado muy competitivo, especialmente para la comida mexicana. Lo que nos hace únicos es el hecho de que somos muy estrictos a la hora de ceñirnos a recetas auténticas con ingredientes frescos y de alta calidad", dice Garfio. "La gente nota la diferencia y tiende a engancharse a Taqueria Factory".
Uno de los platos más populares del menú son los tacos al pastor.
"Hacemos nuestro propio adobo para la carne y elaboramos el trompo al pastor desde cero", dice Garfio. "No muchos restaurantes lo hacen así por el intenso trabajo que conlleva. Apilamos la carne cortada, luego echamos la marinada, después otra capa de carne, otra capa de marinada hasta formar varias capas. Luego se tapa la cazuela con plástico y se mete en el frigorífico de 24 a 48 horas para que se cure. Luego, por la mañana temprano, hacemos el trompo capa por capa en la parrilla vertical. Para cuando abrimos, la primera capa de carne empieza a completar su proceso de cocción, de modo que la gente puede disfrutar de un delicioso taco al pastor, burrito o nachos."
Otro éxito es el plato fusión de moda, el ramen de birria. Garfio dice que rechazó la idea cuando alguien de la cocina se lo sugirió, pero cuando le ofrecieron un plato más tarde, quedó convencido.
"Era una combinación estupenda", dice. "Al día siguiente estaba en nuestro menú".
Fusión de conceptos
Ahora los Garfio están trabajando en la combinación definitiva: Frutilandia + Taquería Factory. Garfio dice que Fruitlandia elabora los siropes de fruta fresca que se usan en los margaritas y otros cócteles de Taqueria Factory, así que siempre ha habido una conexión entre los dos conceptos. Completar la unión tiene sentido.
La tienda de Tempe se construyó desde cero con el concepto dos en uno en mente. Tres tiendas de concepto dual que se están construyendo actualmente, que empezaron como tiendas Frutilandia, se están reconfigurando para acomodar el menú de Taqueria Factory.
Las ventajas para un operador de una operación conjunta en términos de mano de obra, uso eficiente del espacio y gestión de los suministros son evidentes. Pero para Garfio, el verdadero ganador es el cliente.
"Combinando lo mejor de ambos mundos con Frutilandia y Taqueria Factory, pretendemos ofrecer a nuestros clientes una experiencia mejorada de comida y bebida en un único lugar".
