Makes 3 servings
9 oz. white fish
10½ oz. lemon juice
Salt and black pepper, to taste
3½ oz. onion
1 oz. green olives
2 oz. green tomato
1 oz. basil
1 oz. coriander
1 oz. parsley
3½ oz. avocado
2½ oz. cucumber
2½ oz. jicama
1 oz. cherry tomato
Cut the fish into large cubes and place them in a container with 6 ounces of lemon juice plus salt and black pepper (to taste). Let marinate for 5 minutes and remove the lemon juice.
Mix the remaining 4½ ounces of the lemon juice, onion, green olive, green tomato, basil, coriander, parsley, and salt and pepper (to taste) until a smooth mixture is obtained. Add the fish and let cool for 15 minutes.
Serve with avocado, cucumber, jicama and cherry tomato.
