Guacamole con Granada:
Pomegranate Guacamole
Makes 1-1⁄2 cups
2 lg., ripe avocados1 T. pomegranate juice1⁄2 c. finely chopped red onion1 to 2 large, fresh jalapeño chiles 3 T. pomegranate arils2 T. chopped cilantroFresh lime juice, to tasteSalt, to taste
In a bowl, mash the avocados with the pomegranate juice until smooth but slightly textured. Add all remaining ingredients and stir to combine thoroughly. Serve with totopos or as a garnish for other dishes.
