Chef Hugo Ortega, famous in Houston for Hugo's and other restaurants, is partnering with Mina Test Kitchen in San Francisco to create a temporary "pop-up" Mexican restaurant.
Ortega will create a special Mexican tasting menu called Mi Almita, which will include dishes such as huitlasquites corn soup, a ceviche trio, and pozole verde with little neck clams, according to an article in the San Francisco Chronicle. The concept will launch August 23.
Mina Test Kitchen is part of the Mina Group, which operates more than 30 restaurant concepts across the country. The Test Kitchen regularly creates "pop-up" restaurants - Ortega's version will be the seventh in that location since the concept launched in 2015.
According to Mina Test Kitchen's website, Mi Almita "will pay homage to the spirituality and tradition of Mexican cooking, and will be a culinary journey throughout Mexico."
