Makes 2 servings
2 ripe, medium-sized avocados, peeled and pitted
1 small seedless cucumber with peel, chopped
½ c. cilantro, chopped
1 c. fresh spinach, chopped
3 T. lime juice
1 jalapeño pepper, chopped
4 green onions, chopped
2 c. cold water
1 c. Supremo Brand® or Chihuahua Brand® Mexican Sour Cream from V&V SUPREMO®
1 c. pico de gallo
Salt, to taste
Place the first 8 ingredients in blender. Blend well.
Place the puree into a bowl and whisk in sour cream. Whisk in salt to taste.
Chill the soup in the fridge for at least 2 hours before serving.
Serve and garnish with pico de gallo. Enjoy!
