Arroz con Coco y Frijoles Negros: Coconut Rice with Black Beans
Makes 6 side dish servings
2 T. vegetable oil
1 c. rice
1 c. water or chicken broth
1 c. unsweetened coconut milk, fresh or canned
1 c. cooked black beans
Salt and pepper to taste
Heat the vegetable oil in a saucepan, add the rice and cook stirring, until translucent.
Stir in the remaining ingredients and cook until liquid is absorbed.
Allow the rice to rest, covered, for 10 minutes before serving. Stir gently and plate. Fried plantains are good with this.
