Makes 4 to 8 appetizer servings
¼ c. plus 1 T. olive oil
¼ c. tequila
½ c. fresh lime juice
½ t. cayenne pepper
1 T. chili powder
1 jalapeño pepper, seeded and minced
Freshly ground black pepper to taste
2 lbs. raw shrimp, peeled and deveined
Fresh pineapple wedges
Combine ¼ cup oil and next six ingredients in seal-tight storage container to make marinade. Toss shrimp with the marinade, cover and refrigerate at least 30 minutes. Remove shrimp and drain, discarding remaining marinade. Thread shrimp and pineapple onto sliding skewers. Grill over medium-high heat, 2 minutes on each side or until shrimp are just opaque.
