Aji Tuna Poke with Mango Ponzu and Tostones recipe

Makes 4 servings
The Poke:
1 lb. medium diced ahi tuna
3 T. small diced cucumber
3 T. small diced red onion
3 T. small diced mango pieces
2 T. chopped cilantro
2 T. chopped Italian parsley
1 t. paprika
2 T. vegetable oil
¼ c. mango ponzu (recipe below)
1 t. Kosher salt
12 ea. fried TIO JORGE tostones, for garnish
Cilantro leaves, for garnish
4 ea. lime wedges, for garnish
Combine all ingredients except tostones, cilantro leaves and lime wedges; mix gently.
The Mango Ponzu:
1 T. mango chunks
1 T. white vinegar
2 T. soy sauce
1 t. ginger
1 t. garlic
1 T. lime juice
Place ingredients into blender and puree.
To serve: Serve in cup or on a plate garnished with 3 tostones, cilantro leaves and one lime wedge per serving.
