6 - 8 Big Banana Ripe Plantain Slices
1 box pancake/waffle batter mix
Vegetable oil for deep frying
1 c. sugar
2 T. ground cinnamon
Makes 1 dessert-size serving
Heat oil in deep fryer to 350° F. Make pancake batter according to package but use less water/milk so mix is thick. Double battering is optional. Dip Big Banana frozen ripe plantain slices into batter (dip in flour then coat with pancake batter again if double battering). Deep fry for 6–9 minutes or until golden brown, drain, and then place on parchment paper or on serving plate. Sprinkle generously with cinnamon and sugar mix and serve immediately.
